So which shmups on the PS1 & PS2 can be set to tate? I'd like to get a list going for this, so I'll try to keep this updated.

The only NTSCJ PS1 vert ports I know of without tate are Gunbird, Shienryu and Twinbee Deluxe Pack. The former two's Saturn ports have tate, but SS TBDP is also tate-less (this only affects Detana Twinbee, since Yahho is native yoko). Otherwise, all of the following have tate in NTSCJ. Not sure about all US localisations, and totally clueless about any PAL ones.

Taito Legends 2 PAL supports 60 Hz, but lacks tate mode for verticals. Which, coupled with the obligatory interlacing and "deflickering", makes for crying shame. Oh, and no RayForce in the PS2 version. If StarForce (cool name, eh), I mean the copy protection, is acceptable for you, go for the PC version (I doubt it can be any worse than the PS2 one).
P.S. To be fair, though, the PS2 version's got its share of exclusives:

A few more to add to the list are from the Oretachi Geasen Zoku Sono series.
Vol.01 Scramble
Vol.04 Time Pilot
Vol.05 Moon Cresta
Vol.06 Sonic Wings
Vol.10 Terra Cresta
I believe these are the only home versions of Scramble, Time Pilot, and Terra Cresta that can be played in the original arcade orientation.
Its also worth noting (while your tv is on its side) that Vol.03 Karatedo, Vol.11 Quarth, Vol.16 Contra, and Vol.17 Pooyan all offer tate display options. (and I think Vol.07 Burger Time does too)

Even the JPN PS2 import of Success' Psyvariar Capture Box set with DVD of both superplays of Psyvariar Medium Unit & Psyvariar Revision can be viewed in tate. It's officially released under the DVD title of ″Psyvariar Appericate DVD Vol. 1″ from Reverse Babel Label division of Success Corp.
It's too bad that the current crop of superplays released nowdays don't include tate viewing option even if said PCB title is a tate game to begin with. It shouldn't be too hard to implement tate option on superplay DVDs, especially if the publisher uses the dual-layer DVD format.

Those are on the PS2.
