I was playing Super Mario 3 (featured in the hit movie the Wizard) on my Wii a few years ago and it was not as much fun as I remembered when i was a kid. Something was a bit off. Out of nostalgia i decided to dig out my old NES, a copy of Mario 3 and plug it into an old 13" sony CRT television. The picture quality was so vivid, and the controls were so incredibly tight compared to playing on my Wii and LCD (set to game mode by the way) that i could not stop playing for hours.
So began (much to the chagrin of my wife) my quest to rebuild my NES and SNES collection, and set up a retro gaming rig complete with CRT TV and all the games i loved as a child. Initially my wife scoffed at me, but when i got NES Tetris running you couldn't pry the controller out of her hand with a flat bar!
My theory as to why retro games are so awesome on original hardware is that there is no input lag. You are more connected with whats happening on screen. Almost like playing a musical instrument. (skin flute notwithstanding)
Modern game are made to be beaten, old school games were made to beat YOU! The challenge is greater but the satisfaction is massive. After 3 days of playing Super Mario Bros i finally committed regicide on king Koopa. I then jumped out of my seat demanding high five's from everyone in the room. Some felt this was inappropriate behavior at a wake, but i know my great aunt would have wanted it that way.
Are input lag and lack of challenge what make modern game less satisfying? Your thoughts.

Also there's a difference between real-time rendering polygons, and pre-rendered polygons/paint-over sprites. Most cave games are the latter.
There are plenty of hard "meant-to-beat-you" 3D games out there that have a great meld of both 2 and 3D graphics.
So lets not get rid of poly's k? They have their place. It's the design you speak of that's the issue at hand.

As a serious remark on the topic's title, I kind of wish there was a game system in the early 90s that could do Sega's Super-Scaler games justice. Crazy impressive the kind of 3D effects they pulled off with purely sprite graphics. Still has a very stylish flair to it today. Aged much better than mid-90s polygon graphics.

Yeah, it does bug me a bit. No, polygons are in all the cool 2000s shmups that I like, not to even mention other genres.

Wow...I'm amazed this topic hasn't gotten locked yet.
As much as I am a sucker for great spritework, there's still plenty of grade-A games that use polygons, shmups included. You just gotta know where to dig- We need only to look at TF V, Ikaruga, Gradius V, God Hand, Rising Zan, Super Mario 64, Starfox, StarGlider 2, and Panzer Dragoon for proof.
