Enemy chaining, no. Most other forms of chaining are alright. Medal, graze, item... Actually, bell chaining is horrible too now that I think of it.

If you mean the (D)DP-style chaining, my answer is no, at least not in those games.
I did enjoy explosion chaining in Zanac Neo, where it was largely about pressing the button at the right time without breaking the game's flow (pretty smart use of DualShock's vibrations too), but Compile shmups are not something I play for 1cc or high scores (save the caravan modes in Seirei Senshi Spriggan).
That being said, I found chaining in some games of other genres enjoyable and addictive: Shinobi (PS2), where it's at the game design's heart, and Sky Odyssey (acrobatic points), where it drives me to the edge all the time (a single misstep can be fatal, but for whatever reason it never feels punishing). Just... blimey.
I still have mixed feelings about the chaining in Viewtiful Joe.
Dangun Feveron is a shmup where I'd rather lose a ship than miss a single disco man. It's a chaining game with some shooting rather than shooter with some chaining, though.

I reach Hachi regularly and have been whiskers off defeating him. The real pisser is I can get to stg 5 with 3 lives in stock and I can never reach the boss with more than 1 (and I figure I need 2 to beat him, based on my current skills.) As soon as I think "oh shit I'm on stage 5 with 3+ lives", the nerves just destroy me.

When a game asks me to put way too much time into it to start getting just barely acceptable scores, no, that's not really fun. Between spending nine hours at work plus two hours and some change going to and from work, the last thing I need at the end of the day is a game asking me to work a few more dozen hours over god knows how long that would take before I'm slightly competent at it at all. I can get some raw entertainment from survival play but I can't really get into these games in the way the developers intended them to be played.
Battle Bakraid is the exception here - the timers are lenient, and you have both a numerical display for remaining time and a sound cue when you drop your chain. Both are excellent for learning *really fast*, so I can't complain. Then again Bakraid is a borderline case since it is so unlike any other game. Radiant Silvergun could eventually become another exception - but again, it's another borderline case.
Oh, and by the way - medal chaining isn't "chaining", it's medalling, which is something somewhat different, and a hundred times more fun.

Medal chaining is a lot of fun. Battle Bakraid's bizarre take on chaining is ok, it leaves room for strategy. But the very strict take on chaining like DDP or Ikaruga, no, absolutely hate it.

I love DOJ, but chaining there isn't fun. I have yet to try dfk. I agree that ketsui is more fun that way.

I enjoyed chaining the first 2 stages in DDP but its not something im naturally gifted with.

Chaining's cool, though it depends on what kind. I like any kind of chaining more than "secrets" (Batsugun), though.
I'd like to repeat that blaming the likes of Donpachi for the lack of leniency is denying how "skill" works, even if it's already been echoed in this thread and elsewhere countless times. Yes, being good at games is very hard work. No, "just barely acceptable" is still not acceptable. Most games of skill become Donpachis at some point and it seems only DP itself wants to be honest about this.

Chaining is fun when you actually have room for mistakes and isn't penalised too heavily when you blow it. Which is not the case of DP/DDP.

The worst part about DOJ chaining is that you basically have to do it in order to get the second extend (that or basically be good enough that you don't need it in the first place). I'm pretty selective about the score systems I like and strict chaining in a game that forces you to work on it with ridiculously hard timing isn't one of them. Not getting the second extend reliably is pretty much the only thing keeping me from an 1-ALL at this point.

Chaining in DOJ levels 2 and 3 is fun. The first level my chain always breaks after the turret and after level 3 chaining is forgotten about.

As for after that turret, I always unleash the hyper on the first enemy that descends on the left side. I find it trickier to link into the next one a little further up. I'm a total chaining novice, so I use 2 hypers to chain stage 1, but I've seen guys do it comfortably with 1, or none (Icarus.)

Not implying that I can chain the entire levels, just enjoy trying. 
Stage 2 on a good run will be two chains of 500+ with the break at the mid boss. Stage 3, two or three chains of ~300. I've pretty much given up on stage 1. I've watched it done many times but can never replicate it.

You should easily be getting 1200+ hits on stage 2's second half if you stock up 5 hypers for it. Very useful for getting those extends. I'll chain stage 1, and I'll try to do Stage 2 first half as well, but I've never chained it until the chain break at the midboss. I know it's possible to chain into the midboss too, but I've never done it.

Yeah, I find that rather puzzling. Many of the same guys who send the DDPs to the top of the rankings also consider their central scoring mechanic to be "infuriating," "painful," "boring," and whatnot.
