Albert Odyssey is a great game - lovely music and stunning 2D visuals (some are turned off by the 2D hand-drawn art style but I much prefer it to the 3D RPGs out there). As an RPG, it's... okay-ish... not bad at all. Traditional turn-based fare and average story, but the music and visuals really bolster this one. I'd recommend it.
For a better turn-based 2D RPG on the Saturn, I'd recommend
Tengai Makyou: The Apocalypse IV - Saturn (1997)
which featuers some of the best visuals to grace the Saturn and is a wacky RPG that can be played with the Shift-JIS enabled walkthrough available at gamefaqs. It's also super cheap (read, US$10 or so) The link was posted recently, but here is a bit of info on TM-TA4:

For action RPGs... for the Saturn I'd suggest Magic Knight Rayearth. The import is easy enough to play if you've seen the Anime (and you should!) and if not, Working Designs did put out a US version (a bit more pricey - $10 for the import vs. $40+ for the US version).
The PSX had plenty of great RPGs ... but for action RPGs I'd suggest Legend of Mana (some of the best 2D visuals on the PSX) and Alundra (seems hard as heck so far but good... I'm only a short ways into it having just acquired it).
