This, even though I always thought of the R-9 or the Vic Viper as a mascot.

If you don't know it's a boy by now, shame on you. Senko's been out for ~4 years.
Granted, I still find people who don't know that Bridget is supposed to be a boy too.

Remake of Maisya / NCS's classic shooter from the PC-Engine, funny parody shooter, featuring two semi-naked muscle men Adon and Samson as the main characters, and a bunch of muscle men as bosses.
The player's objective is to guide a legendary glob of protein to holy lands through groups of enemies that are aiming for the protein in order to get the ultimate physique!
This game goes down in the annals of gaming history as the gayest shooting game ever! Not many games can take that title!
So seriously, how could they not be the genre's mascots?!

- space invaders/galaga enemies (they've earned their success, like old-time classics such as CastleVania, Mario, Street Fighter. Who could guess how these series would've evolved?)
- Vic Viper/R9/Moai/first stage boss from R-Type.. I swear I know its name! :p (they seem popular enough to be recognizable even for people who aren't much into shmups)
- Reko (for those who've done some research after seeing the HARDEST BOSS EVER video :p)
- Reimu (if you live in Japan, I guess she would count)
- Hibachi (for those who like Cave :p)

Space Invaders isn't really my idea of a shmup...it's just, well, Space Invaders.

Anyway I would vote for the laser bullet.

Or the Flying Shark biplane, sure
