That's the official NESRGB cable kit, so not something the installer did. I also found them to be unreliable and finicky. The DIN cable was very poorly made (the connector wasn't even on straight and hot glue was sticking out) and the audio cable didn't make good contact. My solution was to buy the Framemeister adapter from RGC (
https://www.retrogamingcables.co.uk/mic ... r-for-sale) since it uses the same connector, tweak the pinout to match the NESRGB, and also I modified my NESRGB install to route the audio out over the din connector too, and then I just used a standard SCART-to-SCART cable to connect to my switch. It worked much better. This of course requires soldering. But then, all solutions will require soldering.
If you do want to revamp it, there are various options. You could do what I did (or something similar using a full-length cable that ends in SCART), you could install the official component mod for the NESRGB (

All these solutions would require soldering, of course. Even if you convinced somebody to make you a new SCART cable, there isn't any audio routed to the DIN connector on your NES.
