While I'm optimistic all consoles will one day have a port of the 240p Test Suite, for consoles that currently lack one I'm thinking about what existing homebrew lets you view a custom bitmap or png image. That way you can at least view a grid, checkerboard, etc. for a one time calibration.
N64: Everdrive 64 wallpaper. The official menu can show a 640x480 bitmap wallpaper at 480i, while saturnu's alternative menu supports 240p.
PS2: 640x480 png image of the OPL theme background can be changed, which can be viewed in 480i and 480p. For 240p, run the Genesis 240p test suite in the PS2 Picodrive emulator
PS1: ???
Saturn: ???
Maybe for PS1 and/or Saturn something can be done with Photo CDs?
