Diamond Video Capture Jerkyness

Hello I have the Diamond Video convertor for composite video. I want to capture game footage from PS2 DC N64 etc. I tested out capturing footage from DC, I played some Giga Wing and the footage showed up clear as day while playing on my labtop monitor but when I play it back it jerks anytime anything is happening at all. I tried lowering the sharpness of the video because the audio and video quality isn't as big a concern as fluidity. I was wondering if my computer just can't handle DC footage or footage from a generally fast game or if Its just not a good capture device I'm not sure? Its the VC500 model my laptop is from 2008 I think. Any suggestion would be welcome, I want to capture footage for a game video for youtube.
I did great so much water and milk that I threw up when I was little.
