I found the katakana in the Japanese Wikipedia. A few of them I figured out, but others...parentheses mean the small version of the kana.
1: Golem, Biter
2: Hydra (of course, it was nice enough to give this in English)
3: ka-ra-bu, Abaddon
4: te-ni-i-ro-(tsu)-pu (Tetran 2)
5: Plate (i.e. pu-re-to) Core + ku-ra-bu-re-su + kya-ni-ko-ro (looks like they're both crabs--crab and kyani--but what are the resu and koro?)
6: Kerberos, do-(u)-mu
Anyone care to help?

The Japanese boss names from all the Gradius games are on konaken.com. And you know, if they used to be on Wikipedia you can always click on "History" at the top of the page and click on a date to look at an older revision.
Anyway, Kerberos is a common misromanization of Cerebus. It pops up with that spelling in some other games, like Ninja Gaiden and Mega Man Zero 4. Abbadon's a Biblical name. Golem is called Brain Golem in some English materials, for obvious reasons. And the final boss is quite obviously named "Doom."

{groan} CEREBUS is the mistake. It really is supposed to be Kerberos, or Cerberus if you use the Latin spelling (it was a hard "c" in the Greek; same with centaur). "Cerebus" is probably a conflation of Cerberus and Erebus/Erebos...
Indeed, checking Wikipedia, the original Greek spelling is Κέρβερος. With a kappa (k) and omicron (o).
