I'm on the lookout for a 4-slot MVS Cab, are there any other arcade systems besides MVS which allow for multiple games in the cab at once?

Good question. I think there are really no arcade only games where more than one game rom can be put inot a motherboard.
There is however the CPS2 title Three Wonders with three games and you can buy special cables on which you can attach several pcb's so that should work just like AES.
All of the standard game selectable systems are also for home use
MVS/AES
Megaplay/megadrive
Playchoice/nes
Any others?
