I can't tell from the video but I've used white lithium grease on old arcade sticks to good effect. It's safe for plastics and pretty common so unless someone else chimes in with something more "professional" that should at least be a good starting point.
Here's an Amazon link but you should be able to find it at any hardware store too.
Edit: I've read on other forums that Shin-Etsu grease is often used in arcade sticks but might take a little more effort to find.

Shin Etsu is apparently silicone-based - so I would just go ahead and order some Super Lube (a food-safe silicone grease with Teflon in it) instead, if you're in North America. In Europe, look to see what looks good. Nothing special about the Shin Etsu because it's got a Japanese name; it's just being used because it's what's local. (Complicating things is that Shin Etsu makes a lot of stuff, and it would be easy to get the wrong product just going by the name.) White lithium should be okay (though many sources swear that it's not to be used in metal-on-plastic applications, but only metal-on-metal) but the silicone grease should be even more widely usable, and it's not hugely expensive either. Just make sure you are getting grease; stay away from stuff with any special properties listed, like solvents / aggressive rust prevention. Also not useful for your purposes: Spray-on cans (i.e. WD-40), oil, or really heavy greases meant for motor vehicles.

Interesting discussion AND AN OFFER FOR FREE GREASE! on the Molykote 44 at Racketboy. Might be worth a shot. Man, I never thought I'd type "free grease!"
