Doesn't need to be very portable. Separate power supply unit is fine with me (I even doubt Wii is designed to supply such a device via USB). Theoretically more GB is better, but I suspect discs "bigger" in this sense consume more power and are less durable.
What would you recommend?

I use a small portable 2.5inch LG hard drive with mine, no external PSU, I haven't had any problems.

The Wii can power a 2.5 HDD just fine, USB 3.0 doesn't make a difference to how much power a HDD requires. USB 3.0 is also backwards compatible so the Wii doesn't need to support 3.0, you'll just be limited to 2.0 speeds.
All you need to worry about is HDDs with power saving features that spin down the drive. Those don't get along with the Wii.
Also, putting every Gamecube and Wii game I have and ever intend to play on my HDD, I'm still not using more than 250 GB, so don't waste money on the largest HDD you can find.

Speaking of GameCube games, off-topic but does changing region re-formats a 'Cube memory card, the way it used to be? I'd rather keep my F-Zero GX data, but want to play Kururin Squash! all the same.

You can backup entire memory cards and write entire memory cards... but you can't individually move/copy the F-Zero GX save yet I think.
There's some virtual memory card support if you're launching games from USB, but that won't work while a real card is inserted and it doesn't work with all games.

I use an old WD MyBook Essential 1 TB USB 2.0 Desktop External Hard Drive WDBAAF0010HBK-N /-NESN and it's been fine. I use it to run Wii & GC games and roms for WiiMednafen. Only recently have I noticed sometimes I need to reboot the Wii to get a game to load. (Maybe a spin down issue?) However, once it loads it plays great for hours. A quick way for me to determine whether or not a game will load or if I have to reboot is if the song I set on my usb loader starts playing or not.
