Just out of curiosity, could NOACs do RGB? I know they couldn't do RGB out-of-the-box because they'd also have to clone Famicom Titler/Playchoice-10 hardware, but could they still be modified with an RGB PPU? Not an actual one though, possibly something like this:

I don't see how you could get into the data lines connecting the CPU and the PPU when the both are unified in a single chip.

yes, but stereo on the NES is overrated. The basic hardware design is mono and getting a stereo effect using a mod is just a bit of trickery.

well, no, not really. Composite's rubbish and the better and larger the displays, the worse it gets.
If you don't want to go RGB, my guess is that the Retron 5 with HDMI will be the next best choice.
