Hello a long time ago in this galaxy not so far away I use to play a shmups. but I forget its name as the dark side of the force is clouding my memories ok ok I'll stop with the star wars references.
But seriously I'll try to explain it the best I can.

It was a vertically scrolling shooter you played a star ship that grew in size and power as you collected power ups (I think) your ship would become huge to the point where when you came up to a choke point the sides of your ship would be ripped off.

It would expand mainly out from the side starting with 2 engines with guns I think then 2 more engines with guns then your ship would change into something else and you would keep adding parts to it as you progressed through the mission.

There was terrain you could run into. The demo I had was entirely based in space. Everything looked very alien if I remember correctly. I think it had bosses at the ends of the levels <-- yeah that helps not!

Could be Slap Fight.

Do you remember what system it was on? Arcade? Console? PC?

When I initially read this, I thought of Data East's Darwin series for whatever reason, though I agree that adding parts to the sides brings Slap Fight immediately to mind. The Darwin series included 1986's Darwin 4078 and 1987's Super Real Darwin, the latter of which was ported to Mega Drive as Darwin 4081 in 1990. It was also included in Data East Arcade Classics for Wii. I guess it boils down to how the parts were added to the ship, as other games, like Nihon Bussan's Moon Cresta and Terra Cresta, also featured evolving ships.

Just to answer real quick it was on PC. I'll check out all those you mentioned Grantwindsor.

When I say huge I mean huge! you would become a similar size as a boss. I also remember the ship was always pretty grey looking these other games you have shown me look a bit more colourful than I remember.

I don't think it is any of the games you have shown GrantWindsor.

Lets see I think you would collect parts either based on your score as you progressed or as pickups you would get the upgrades as you played and I think they carried on to the next mission so it was important to not get completely ripped up by the boss. I distinctly remember it being you got two cylinders with rounded tops added to your ship I think they were both guns you would get one on either side then when you got the next power up you would get two more added then after that the ship changed more and more getting more massive and having more guns. But I can't really remember what the transformation was like after the first two I think you just got more and more wide and a bit more length.

Looks like the ship did not get as big as I thought must be a boss I remember or something..
