Wrote a huge thing for you and then accidentally clicked off the screen. BAHHHHHH. I apologize if this isn't written well or doesn't make much sense.
Anyhow, I'm not really the best authority on the subject, although at this point I've played a handful of visual novels/dating sims. Danza seemed to know his stuff but I'm not sure if he visits these parts much anymore. I had a thread here: http://shmups.system11.org/viewtopic.ph ... ai#p632521
It doesn't go into much detail and not many examples are given, but I'll try and expound upon it.
I'll stick to US released games for now that are available for purchase. Also available by "other means," but yeah; not stepping on those toes. Casual Romance Club is really the only straight up dating sim that is available. Not really a visual novel, as the story is minimal, with heavy emphasis on calling, talking about nonsense, taking ladies out on dates, etc. The stuff that pathetic dreams are made of. What little story there is is absolutely worthless, but some of the conversations you can have aren't all that bad. I used to get drunk and play it and get super depressed. Ultimately you try and sleep with the woman of interest. I'm sure you were surprised.
Most stuff released is more of a visual novel, although a handful of them have a lengthy story with emphasis on dating, making the right choices, etc. D.A. Capo is a nice production with a good release. Sequels and animes and what-not have been released since, but stick with the original visual novel. I like it quite a bit, and it's pretty long.
Tokimeki Check-In is a cheapo release that's a bit older. More of my style with the character designs--really 90s-ish. A visual novel, but with a heavy focus on "getting together" with various women in the hotel you run. Essentially a harem, but some of the stories aren't all that bad. Gets pretty dirty, but worth playing.

A lot is available on different sites for different prices, either download or disc. I've got quite a few of their releases, but the few mentioned are more along the "dating" variety.

Tokimeki Memorial, any disk-based version will do, but the Saturn and PC Engine versions seem to have the best extras (shmups). It's kinda old, but TM1 is still one of the most fun pure dating-sims out there.
If you want a pure dating-sim that looks and feels more modern, try Kimi Kiss. It plays very similar to Tokimeki Memorial.
If you're actually looking for a visual novel, try Clannad or Steins;Gate.
It's not really a visual novel or a dating-sim, but Idolmaster is pretty fun and has many dating-simish elements.

Not all that knowledgeable about this, but occasionally enjoy a good dating sim/adventure/visual novel/eroge/galgame
If you're looking for English translated titles, can't help you. If you're looking for Japanese titles, however, here's a few that I can recommend:
* Comic Party is already brought up by KAI but worth a second mention IMO.
You play the role of an aspiring doujinshi (fanzine) artist and this game has you managing both drawing the doujin (3 steps - sketching, inking, finishing) in order to make it for the scheduled Comic Party event (preeeettty much a Comic Market spoof, Big Sight and all) as well as meeting up with the girls, who're also in some way related to this huge nerd event.
Getting your manga done in time is usually not a problem so you're often left with lots of time to fool around in. It's a slightly older game, runs at 640x480 if I remember correctly but maybe thanks to that, contains some bits of animation (mouthes and so on, also actions you perform). It's enjoyable seeing people lining up to buy your doujins
There's a few versions out there of Comic Party. You have the original PC release (named just Comic Party) which does, to my knowledge, include porno endings. Then there's the Dreamcast release which doesn't have this. To balance that out, a new character named Subaru is added. This version was later re-released for PC as Comic Party DCE (Dreamcast edition). It's the one I've played.
There's also a PSP release but don't know much about it.
The Pia Carrot-series is another recommendation. There are at least a few games out. I was mostly thinking of the 3 first. I've played the 3rd game a bit myself (only cleared like...2 characters or so yet tho') but it has been quite enjoyable. I want to remember it requiring you to set up a schedule for your character early on, so having an idea of which lady to pursue helps when making sure your schedule matches hers. One thing that makes this game more enjoyable than most, for me, there's a whole bunch of animations in this game: actions you perform, mouths & eyes and the occasional background effect (mostly ripple effects caused by the heat). Like Comic Party, the PC version runs in a resolution of 640x480.
This game is also available on console, without the naughty bits...I think for Dreamcast and PS2? Earlier games in the series was released on plenty of older systems such as PC-98, DOS, Win 95 etc also Saturn, Dreamcast & the PC-FX (translated version available!)
* Hoshi no Oka Gakuen Monogatari: Gakuensai - An enjoyable PS1 game.
There's almost more "gameplay" than visual novel-style interactions in there. Basically you've just transferred to the Hoshi no Oka Academy and their culture festival is coming up, hence the name.
In short, you spend most of the time more or less freely walking around on a map of the campus, talking to people (most of which are girls, naturally. There's like...only 2 or male characters besides you)
The goal of the game is to help out all the clubs finish the preparations in for said festival, oh and getting yourself a girl. You will also need to, in best TokiMemo-style, do your best to keep your "friend level" balanced. Basically, if people start to become angry at you - talk or interact with them until they're satisfied
* To Heart 2 - Well known but very nice visual novel-style game. Gameplay-wise it's pretty much strictly choice-based visual novel standard fare. Art is very nice though and it's a "newer" game so the PC version runs at 800x600. Originally a PS2 release, later arrived to PC in an "X-rated" edition. I think you lot know what that means. This version also adds a new character & scenario.
Pleasant visual and soundtrack males for a mostly soothing experience. If you have the patience...that is. It's a lot of text. Speaking of text, it's not presented in the usual small box but rather on the whole screen which is a bit unusual.
* Yoake Mae yori Ruriiro na - Brighter than Dawning Blue - Probably mostly famed for the off-model QUALITYof it's anime adaption. Very pleasant mood throughout, partly thanks to the soundtrack which is a keeper. Otherwise pretty much standard fare visual novel. Princess from the moon comes to make a house stay at your...well, house. (Of course!). I think we all know what this will lead to. If you've got a thing for royalty, "Yoakena" might be a good bet. Released on both PC & PS2. I think the PS2 version adds more characters but haven't played it. Oh and once again it probably removes the naughty scenes.
If Vampires and the occult is more your thing, the same developer, August, released a game called Fortune Arterial with a similar feel albeit with said twist.
With pretty much all of these, except for Gakuensai, there's a slew of anime adaptions if you want to check out the feel of the setting/characters without actually playing the games.

Katawa Shoujo, or Crippled Girls or something. Played it for a laugh and actually got very much into it. Despite the name, it's actually quite gentle, though it obviously can be accused of fetishising disability. I remember coming across True Love a long time ago and deciding to play it just to see what the genre is about. Was expecting it to be garbage but ended up enjoying it. Played through the whole thing 3 times to get all the girls.

Everyone has covered everything pretty well. Love Plus got a fantranslation on the DS, it is pretty great although buggy. The first half is standard dating sim, when you "win" your girl you sort of just hang out with her, go on dates etc. I got really drunk playing it and had to work the next day, I was so close to getting her and had to go off to work. Turns out I was just drunk/hungover and confused and didn't have to work at all. The relief and happiness I felt knowing I could go home and finish everything up.. mother of god.
But yeah, plenty of great suggestions so far.
I'll just add, Persona 3 and 4 are half dating sim/dungeon crawler. They are extremely well loved by a lot of people and are probably worth checking out as others have mentioned. But I really prefer mainline Shin Megami Tensei and stuff like Tokimeki and Love Plus (which I highly recommend). They are definitely worth giving a go, but just aren't my cup of tea.

I thought Yakuza 4 was a way better dating sim than P3/4. In Yakuza 4 you can actually take girls on dates and interact with them.
In P3 you hang out with girls, listen to them complain, and then eventually have a tender moment, whatever that means.
Katawa Shoujo is genuinely great, too.
