I need help finding out the name of an arcade game
I am trying to find out the name of an arcade racing game that I played during my childhood at Chuck E. Cheese's. All I remember was that this game was huge; it had a huge widescreen TV set up high and far from the player and you actually sit in an area the size of a real small car. In the game itself, I recall there being 4 cars to choose from; a red one, a blue one, a yellow one, and a green one I think. One of the cars resembled a Dodge Viper. That's all I remember about the game.

I don't think it was Ridge Racer Full Scale, the area that you sit in wasn't actually a car, it was the size of one, but it didn't have wheels, just the doors, and it had different cars to choose from, not just one. Also, the monitor was located higher up and slightly further away.

Judging from the description one of the Cruis'n games comes to mind as a candidate, but I'm not aware of those ever being done in a full-scale cabinet like that. I know Sega did some games with big full-scale cars that (for example, the full-scale setup for Indy 500 that the Gameworks here used to have matches the description, you can find a photo on this post) but I don't think those ever made it outside of Sega's own arcades.
Maybe it would help if you could tell us what timeframe you're talking about. Judging from the description, the mid Nineties sounds like a good guess.

No it wasn't a Cruis'n game, and it was the late nineties when I played it, but I'm not sure when the game was produced; it was most likely made before I was born in 1995 or somewhere around that time. Just to make sure, does the car selection menu here look familiar at all? The cars' colors would mostly match with what you described.

Could it be Konami's Racing Jam deluxe cabinet setup? This particular racing game featured some slick Japanese drifting type of cars to take out for a spin + 16:9 CRT-based arcade monitor for maximum visual punch.
Atari Games' Hard Drivin' and Racing Drivin' were cool for their time back in the late 1980s and into the early 1990s.

Scud Race featured four cars with at least two of those colours and an actual Dodge Viper. Depending on how little you were, you might just have been in one of the regular cabinets!

In the USA, Scud Racer was known as Sega GT. Still an impressive arcade racer nevertheless from the likes of Yu Suzuki and Co.
That Dodge Viper in-game was the GTS-R variant indeed.

Also, I remember one of the tracks taking place at night on a freeway that had bridges and overpasses that were under construction, and there were some dangerous jumps.

The deluxe Sega GT cab had an adjustable seat to accomodate short or tall folks with ease...and a heavy-duty stick shifter as well. Not to mention some strong force-feedback effects for the steering wheel setup also.

Maybe it was because I was small at the time, but I clearly remember this being larger than a regular cabinet. It took up quite a lot of room and the thing that stood out was how the monitor was positioned; high up and far from the player. Isn't this the Viper, though?

I don't have too many details, only vague memories, since I was a little kid at the time. Being a kid, of course I thought it was a good game; growing up I loved cars and my dad always took me to play Cruisin' World and other racing games at arcades and other places when we lived in LA. The most distinct details I remember about this game was that it was huge, and that one of the cars was a Viper. While I do not recall the tracks, the only one I clearly remember was a freeway at night that had bridges, overpasses, and offramps under construction, which made for some dangerous jumps.

Midnight Run looks like it could be it. Any of this ring a bell? It has the cars (no green, though) and the races take place on freeways. The only other footage I could find on Youtube is this attract demo of the arcade version.

But Midnight Run 2 doesn't have green car CMIIW, and all playable cars are Japanese sportscar. (Red - Honda NSX, White - Toyota Supra, Yellow/cover car - Nissan Skyline R32)
