This is a list of all games in which your plane/ship gets bigger as it powers up, recieves new parts directly attached to it.
Things that are around/in front/behind the ship don't make a ship an evolving weapon, only parts that actually "fuse" with the ship do.
I can only remember two right now

Pixelships and its sequel Pixelships Retro. It's basically Pokemon meets shmups. Even in the sequel, you can watch as your ship evolve in-game (in the first game, you need to be in the ship selection menu to evolve a ship).
I checked all the titles everyone suggested and didn't reconize any of them thanks again for everyone's help I'm starting to feel bad for being to stupid to remember on my own ....Damn
Hmm, I know the engine changes position from rear thrust to downward hover mode during a boss fight (also seen in the opening sequence of Raiden II arcade, and the CGI opening for Raiden Project). It's a really cool detail, but probably not what we are looking for.

Actually the ship transforms after powering up sufficiently. See the Hitboxes section in saucykobold's excellent Raiden DX Strategy Treatise for a visual reference.
OverKill, an old DOS shmup that feels very euroshmuppy, large focus on the lifebar mechanic, big hitbox, etc. Ship would grow roughly double the size when you maxed out its upgrades.
If you're looking for upgrades that increase the size of your ship, Slap Fight is really the big daddy. I swear your hitbox is like 1/2 screen width with fully loaded wings...
Halley's Comet and Eight Forces are also interesting (not necessarily good, mind you) games which like sticking large metal objects to your ship.

Oh god the memories.....
Anyway I don't think they count because the wings are not parts of the actual ship.

Look, I don't care if what I am doing helps to advance your dream of compiling a list of every shmup with (x) feature but at least be consistent with your own rules. I'd accuse you of drunkposting but you're too young
