Alright, I think I'm onto something here ...
THE CISCOGUN
So we have these old 1700 series Cisco routers at the office. Some of them really don't work any more, and even if they did they're not very well suited for anything.

The back -- I've already removed the guts, lots of cutouts for mounting connectors and running the JAMMA harness out.
Internal - a small fan, lots of shielding which can be removed for more space.
The power supply for these units is pretty weak (+12V @ 2.0A, +5V @ 3.0A, 30W), so I pulled one from a 2600 series that I'm hoping will work, it's 50W (12V @ 1.2A, +5V @ 9.5A):
It fits great, should be no problem to wire up a standard 20-pin ATX connector on it for my Vogatek Mk II, has a switch and a standard 3-pin IEC AC plug. However I'd like an expert's opinion on whether the supply is powerful enough ... I've looked at the specs on a few arcade PSUs and the numbers sound a little low ...
