Now that I'm fermenting in kegs I realized I could sample the young beer. Only 6 days since brewing the gravity has dropped down to 1.003, meaning the beer is 10.6% abv. Not that it tastes particularly great right now (needs a lot more time to clean up/smooth out), but this is cool I can sample it at any point in the process.

1) I have been brewing all grain a little over a year. It's much more complicated than extract and it takes longer and you will need to overhaul/upgrade your equipment. All that just to save some money? Well, it ends up costing about half as much as extract, you have more control, and I also think more satisfaction. Elitists will argue that extract isn't even brewing and I hesitantly sort of agree. At least I'd argue that extract is only doing half the job.

2) Your primary fermentation may be done, but I always ferment a month just to be safe. After the first week when most of the sugars are eaten by the yeast, the yeast still do things to clean up the beer. But why take my word for it? Try sampling it at different stages. My 6 day old beer I tried yesterday was pretty damn gnarly. (The exception by the way are some of the small British beers, notably milds. Apparently some of them can go from grain to glass in about a week.)

3) I belong to the Maltose Falcons, and I brew with them occasionally, but mostly brew on my own (typically once a month.) I mostly brew at home though on my own system--a picnic cooler mash tun, a 15 gallon kettle, a big ass propane burner and now using the kegs as fermenters.

4) How can you say 'secondly'!? I'm fermenting in corny kegs (yes, the 5 gallon cornelius kegs), so no more 5-6 gallon batches. Either 4.5 or double it. I use ball lock since all my disconnects use this fitting. The cheapest I've seen these kegs going for (as of late) has been on Cornykeg.com for about $50-$55 a piece with shipping (you can get converted pin lock for the lower range, or the standard ball lock for the upper range.) Setting them up as kegs is simple after that. If you want really specific details, pm me.

5) Two best purchases for any brewer (I know you didn't ask for this): Beer Smith and Palmer's How to Brew book. The latter you can read online (though I reference it all the time), the former you can check out a demo. I have no idea what your skill level is so I'm probably preaching to the choir, but if I could give advice to myself two years ago, this is what I'd most recommend.
