I know this is probably super old news to people, but I'm pretty psyched about it and it wasn't as straightforward as I originally thought.
I was able to pair my Wii Remote with my Windows 7 PC using an old generic cheapo Bluetooth adapter I had lying around, and with a combination of GlovePIE (used to translate inputs from Wii Remote to another device) and PPJoy (virtual joystick driver) I was able to setup and use my Mad Catz TvC stick in MAME.
The PPJoy driver was the part that I was missing. It was fairly simple to get GlovePIE up and running and have the joystick send keyboard inputs, and it was working perfectly with everything except MAME. Apparently in MAME after 0.117 something broke with the multiple keyboard inputs. I was tearing my hair out!!
Now I think the problem is there is a bit of lag ... I haven't tested it yet, but I suspect emulators that will accept the keyboard input directly from GlovePIE will be more responsive. But having to go Bluetooth -> GlovePIE -> PPJoy -> MAME is messy ... I think I may invest in that Mayflash adapter eventually.

Ok yeah, just tested using keyboard inputs and CRS68K and there is far less lag.
Too bad it doesn't work with MAME that way ... I guess I could look for 0.117?

Play-Asia carries it for ~$15, but if I want it tracked, the shipping is $17. And Deal Extreme doesn't carry it, which surprises me.
Looks like eBay might be the best option.
