The left is normal game and the right option is a beginner mode. The beginner mode features an easier difficulty and only allows you to play the first 3 stages.

It's obvious, it's a course selection screen. OKAY not so obvious for everyone. I'll make it simple:

It says "Pick your course" or something like that, the option to the left is the normal course, all 10 stages. While the right option, is the easy course but it has only 3 stages (BUT MUCH lower difficulty).

Left: "Technical (Normal)"
Right: "Beginner Mode (3 stage end)"

Technical is the full game, with usual Gradius rules.
Beginner ends after stage 3. It is easier, and if you die you retain some of your powerups.

You're in for a really hard uphill battle to win that game. It's not kind....

Stage 1 is easy regardless and Stage 2 doesn't feel any different for me in either mode. Stage 2 destroys me on either mode.

Also, I think you only keep the speed ups when you die.
