Due to the vacuum of space first of all, and the logic that lasers are made from light energy, and for any sort of ship to dodge light is nearly impossible unless you're talking about moving at light speed, which is also not likely.
Most shmups have missile weapons too & they could easily be fired in space.
You could even fire regular bullets from a Vulcan cannon as long as the propulsion system is not based on concentrated gases like inside the regular hand gun chamber. You could also get very accurate & fast result by using a regular sling shot in space!
You can have explosions in space, they just wouldn't produce any gasses & fire will be extinguished within seconds. But they would be bright.
They will just look a bit different, based on the materials that make up the space surrounding the enemy battleship.

As for not being able to avoid lasers in space, I doubt you could be able to avoid it on earth either. Besides is most shmups where you encounter a huge-ass laser beam  (Final Boss Macross SDF – Banpresto – Arcades & Blazing Star - NEOGEO), usually you’re just supposed to die anyway & pump the next quarter in… so that wouldn’t be a problem in real life :)

So intergalactic combat based on shmuping conditions shouldn’t be a problem really….

I really like TGK's final credits. Yes, that's exactly what happens.
Just thinking of that first level makes me shudder. It is obviously the hardest first level in any game, ever...

Colliding with ANYTHING in the scenery kills you...

You only have one chance, so no R-type memorization...

There are a billion competitor ships that slows you down or drag you into the scenery...

You can't shoot or bomb except when reaching the boss...

And even then, your main shot is limited, and you have to fire into the opening made by another (now defunct) ship in order to get into the core...

Agreed with what ST Dragon said. You can use rail guns to fire solid ammo in space. Don't know if it will be more effective than energy-based weapons, but it's completely possible.
Don't hold grudges. GET EVEN.

Rail guns muzzle velocity have reached up to 4-5 km/s, some 3 times the speed of the fastest anti-armour artillery of today. The main roadblocks now is size and cost.

it will effectively be what we perceive as "laser" in shmup I think, since the (metallic) projectile is probably heated to the point of emitting light before it gets shot out of the barrel, and it travels so fast that the human eyes would perceive the path as a continuous beam.
