I haven't played the PSX import version of DDP in a while but I would select the Normal difficulty setting. Of course, I would be using a modded PSX console to play it. Btw, the real DDP PCB that Cave/Atlus released back in 1997, has different names for it's difficulty settings.

Normal is the default, so I've always stuck with that. With wait turned "on" it's the closest to the arcade version's default.
