I'm not sure if you want to import, so I'll stick with US-released stuff.
My personal favorite in the shmups department on the SNES is Space Megaforce, though if you don't like Compile it might be a different story for you. If you like R-Type then try to get ahold of R-Type III. Gradius III isn't bad either, though there's a lot of slowdown. Axelay is great-looking, though I find the gameplay rather average. In any case, you can get most SNES shmups for relatively cheap, so none will be a huge setback if you don't love it.
As for other stuff, if you like RPGs (and don't have the PSX re-releases), I'd recommend FF6 and Chrono Trigger, plus Secret of Mana for an RPG/adventure hybrid. Kirby's Avalanche and Tetris Attack are good puzzlers, and Super Mario World and Kirby Super Star are nice platformers (you might also pick up Mario All-Stars if you don't have the first 3 NES Mario games). There's lots of other stuff too, but I'll let others cover that.

Some games I recommend:
Castlevania IV/Akumajo Dracula: A very nice entry in the Castlevania franchise. The ability to aim the whip in any direction is very useful. It has some cool bosses like a rock monster that grows and shinks while you are trying to avoid the platforms and the rocks. The level variety is excellent and includes everything from a level with moving walls to the classic clockwork level. Whip swinging is a very cool ability that should have been used in more Castlevania games. The music is all around excellent too. Castlevania IV is not the remake of Akumajo Dracula X. Castlevania Dracula XX is that game.
Contra III: Excellent side scrolling shooter. The gameplay is very intense, especialy on harder modes. The level designs are excellent with stuff like a wall climbing chase with a mech that has giant legs and an airborne fight against a ninja on a moving aircraft. There are levels with mode 7 where you have to find and destroy enemies that protect themseleves by putting up a shield and then fighting a boss after these enemies are destroyed. These levels are very intense and provide a nice change of pace, though opinions on them (and just about anything with mode 7) are mixed.
Tetris 2/Tetris Flash: A very fun game that combines Tetris and Dr. Mario with colored pieces that fall apart. It has a very cool puzzle mode that is different from the puzzle mode in the GB version. The GB version has 99 pieces for each level, but the SNES version has a limited amount of pieces to solve each puzzle.
Teenage Mutant Turtles IV: Turtles in Time: A very cool remixed version of the arcade game with better game balance, new stages, and cool two player gameplay. It's much easier to throw enemies compared to the arcade version. The surfing and hover boarding stages have been changed into fun special stages where you try to get all the pizza boxes and kill all of the enemies. They don't get crowded with enemies anymore, but still end with a boss.
Super Mario World: The SNES Mario game. Plays like classic SMB with some new additions like the cape and Yoshi. Yoshi is an awesome addition to the game. He eats enemies with his tongue and can use some colored turtle shells for special effects like throwing a wide ranged three fireball shot or flying. The levels aren't as varied as the ones in SMB3, but they are very well designed.
Super Mario All Stars: All of the classic NES Mario games in one place, including Super Mario Bros 2 J.
Street Fighter II Turbo: On other systems, but still an excellent port of Street Fighter II Turbo. All of the characters from the arcade are there and it has Champion Edition with it too. It has better sound than the Genesis version, though that version of the game is every bit as good as this one, if not better.
Super Metroid: An excellent action/adventure game with a huge amount of exploration, cool bosses, excellent control, and great area design. Trying to find the fastest way to beat the game is great fun.
Chrono Trigger: Excellent RPG with great characters, a cool time travel theme, and multiple endings. It is a bit easy, but the fun factor more than makes up for it. There are no random battles. It has a Final Fantasy like battle system with the cool addition of team up attacks. The team up attacks add greatly to the strategy of battles and are a great deal of fun to use. There are little twists and turns in the game that make the game even more fun.
Zelda III: A Link to the Past: An outstanding action/adventure game. There is a variety of dungeons (levels) to explore, each with a boss at the end. The overworld is rather large and made even bigger with the addition of the dark world. Very cool items like the fire and ice rods add greatly to the game.

If you like RPGs (which SNES has a lot of 'em...), you should check these out:
Terranigma
Illusions of Gaia
Chrono Trigger
Secret of Mana
Secret of Evermore
Super Mario RPG
Breath of Fire
Breath of Fire II
Final Fantasy II
Final Fantasy III
Earthbound
Lufia
Lufia II
I'm sure I'm forgetting some, but that's what I can remember off-hand at the moment.

I can't believe I forgot to recommend Yoshi's Island. It has a slick storybook like style and some of the best use of the Super FX chip I have ever seen. Yoshi can hover in the air by holding down the jump button. Yoshi eats enemies with his tongue and turns them into eggs when the down button is pushed. He can then fire the eggs at enemies and to get items. This ability is also needed to get past some areas. At certain points of the game Yoshi can transform into vechicles. There are classic SMB elements like the donut platforms here and there too.
Everything BrianC said and then Skyblazer.
You can buy the Final Fantasies back when they were awesome on the PS1 a la Chronicles (also includes Chrono Trigger, which is my second fave RPG ever) and Anthology.
Super Castlevania IV is still my favorite Vania ever, but who knows, maybe one day I'll come to my senses and say Bloodlines is the best.
When I try playing my SNES recently, I just can't. I can't explain it, but I'm just not having much fun with my SNES. Ten years ago I would have said the SNES was the best console ever without hesitation, but now I say the Genesis is the best...with some hesitation.
Just not enough of those quick pick up 'n play games that the Genesis had.
Oh yeah, forgot to mention The Ninja Warriors, that game rocks the hell out of me.

Lots of Good'un's in here:
http://forums.insertcredit.com/viewtopic.php?t=50
If you're willing to grab ROM's and stick translation patches on them, you might try Rudra no Hihou (Rudra's Secret Treasure), Seiken Densetsu 3 (Secret of Mana 2, also home to one of my favorite game soundtracks), Dragon Quest VI, Live a Live, and more but I'm drawing a blank.

Some other SNES games I like playing, that can be had cheap:
Cybernator - Awesome mech game with cool varied gameplay
Demon's Crest - Great graphics in this title from Capcom, set in the Ghouls 'n' Ghosts world and sort of Metroid - like gameplay.
Batman Returns - excellent beat 'em up from Konami, atmospheric just like the movie
Sonic Blast Man - just a cheesy beat 'em up, I dunno, I have a soft spot for it.
Sunset Riders - like Contra in the Wild West.
