What exactly does the Update function on Seibu SPI PCBs do?

What exactly does the Update function on Seibu SPI PCBs do?

I've been wondering this for a while and never quite found an answer. I know when you change the cartridge on an SPI board you need to set JP1 to update and then it runs for about 10 minutes, but what exactly is it doing at this time?

The countdown timer will say "999" and proceed to count backwards to "0". The pacing seems to be quite fast when it is going through it's updating phase -- on a whim, I decided to time it with a a stopwatch and it was less than 10 minutes to update the SP1 mobo with a new SP1 game cart setup. Of course, this is using the bigger first revision SP1 mobo & not the smaller 2nd revision SP1 mobo.
