I'm going to try make carribean macaroni pie tonight i think. i love it but have never made it myself before.
i think i may add some chorizo for protein tho but it might be overkill as it already has egg in it

Made a delicious "commie salad"; basically it's russian salad but with a chinese spice-mix added to it. :mrgreen:

Hopefully going to do some enchiladas this weekend myself. The local store just got its annual shipment of Hatch chile in (I grew up in New Mexico, and don't really miss anything about it but the food) so I need to figure out some way to roast those up without ready access to a grill.

Just fixed some piping hot 7-cheese tortellini tossed up with a bit of virgin olive oil and a bit of extra shredded cheese on top. Tastes mighty fine going down the throat. Sure tastes great with a bit of freshly made pesto sauce mixed in as well.

I sure can eat a mean plateful of spaghetti with pesto sauce any ol' day. The only thing is if one eats too much pesto, it'll be coming out of one's pores the next day. At the very least, it'll keep the usual pesky blood-hungry mosquitoes away since they don't like garlic anyways + keeps the possible West Nile virus at bay as well. I've seen some huge skeeters out flying around from time to time...usually gets worse if the weather ends up getting hotter during the summertime. But with the recent unseasonably cool summer weather, I really haven't seen them much lately. Ain't no fun getting bit by a hungry skeeter, especially if you're trying to get some sleep (or if you've got two of them flying around in the same room). Where's that damn flyswatter when you need it most?

Just finished making the enchiladas I mentioned earlier in the thread. Lots and lots of work (Total cooking time came out to somewhere in the neighborhood of five hours, but that also included things like roasting the chiles) but they turned out really tasty. It's really the Hatch green chile that makes these.

I just had half a jar of my dads home-made pickles. I think he used a little bit too much horse-radish though, my tummy feels funny.

I just finished making beef broth. One of the best things about living in New England is that there is no shortage of awesome ice cream. Right now I'm enjoying a piece of pumpkin ice cream pie from Shaker Pond Ice Cream in Maine. I just bought another quart of their caramel apple as well, which is easily my new favorite ice cream. It's apple ice cream with bits of apples and a caramel swirl and is a more than adequate replacement for the long retired Apple Crumble from Ben and Jerry's.
