What are you eating/cooking?
Seems like we haven't had a food thread in awhile so I figured I'd start this.
Anyone else like to cook? I've been getting into it more and more lately as I pick things up here and there and today, I'm proud to say, I made my first real, no-shit, soup from scratch. I've been trying to get less processed/more natural foods, which are more expensive (you'd think that something with less done to it would be cheaper but no...), so to justify spending twice as much on a chicken I decided to make stock from the leftover corpse and bones. Today I used the stock to make potato chowder and it was ridiculously good. I made a roux with bacon fat to thicken the soup, crumbled the bacon in, and topped it with shredded sharp cheddar cheese and good god, it was like a koala bear crapped a rainbow in my brain. I don't think the American Heart Association would approve but god damn if that wasn't delicious.
Right now I'm eating a 1/4lb Pearl Hot Dog. They're pretty awesome. I don't know if I would put them over Sabrett's or Nathan's yet but they're pretty good. They have a really good snap to them and are seasoned well. Spicy mustard and onions improve any hot dog but these are pretty good on their own.

I my wife fed me hair pie tonite...said she was way overdue....so here's what when t down: she fed me hair pie with side of tacos, I in turn fed her a jumbo sized ring bologna with all the trimmings (also called a "hunk o'pipe"here in the Detroit area).

I'm having some milk with rolled oats and raisins put in for a good measure, warmed up to an extent so it's not completely raw. No sugar or salt (this way I can enjoy the basic tastes of all three ingredients).

Last night my fiancee and I made pork loin with mint, thyme, rosmary and S&P with a side of roasted veggies and steamed spinach. Quick, easy and tasty. We made sushi a few months ago and sweet jebus it's not very expensive and anyone can do it.
I've got a handful of recipes to try out -- bananas foster, beef and Guinness stew, stuffed mushrooms...

You sir, are a gentleman. I will dance at your wedding!

Made a bacon, egg, and cheese bagel this morning with a little bit of homemade blueberry syrup on top and damn it was good.

Re: What are you eating/cooking?
I've been messing around with trying to make chicken teriyaki similar to what's served in the various teriyaki places up here at home (it's a particular style that seems to be specific to this area.) So far the results have turned out decent, but not quite as good as I'd like.
I've actually got much better appliances (and more counter space) in my new apartment than I had in my old one, so I probably need to spend some more time cooking. I'm not doing as much of it as I should these days.

I love pork loin but I think I burned my old lady out on it because of how often I've made it over the past year.Square King wrote:Last night my fiancee and I made pork loin with mint, thyme, rosmary and S&P with a side of roasted veggies and steamed spinach. Re: What are you eating/cooking?
Funny you started this thread today... Just so happens that I cooked one of my favorite recipes which I don't do all too often: Japanese-style duck-breast
It's easy to do, but I find myself having less and less time to cook some delicious food. As for the recipe, basically you first roast the duck-breast on its "fat-side" at a high
temperature in a pan, then after a few minutes you'll turn it on the other side and lower the heat. Meanwhile, personally I take an additional little pan and mix sugar, mirin, sake and soy-sauce in that small pan and heat it up but not too much, it's just to melt the sugar and mix everything together. After that you can just pour some of the sauce over the duck-breast with a spoon and let the duck-breast cook at low temperature with the cover on it for about 10-15minutes tops. If you have some sauce left you can check from time to time under the cover and pour it again on the duck-breast. Carve the duck. eat. If you like it spicy there's a spice called "Shichimi Togarashi" that goes very well along with it.
Hehe, I think that's the first time I explained a recipe in English. I hope it's not confusing.

I suck at rolling maki, especially if it's the really thin ones. But I often do Gunkanzushi and Nigiri.Square King wrote:We made sushi a few months ago and sweet jebus it's not very expensive and anyone can do it.

Filled with a bunch of damned iron chefs here.
Smoothies and coldcuts all day, every day. Too lazy for anything more complicated. There are cobwebs in my oven.

Re: What are you eating/cooking?
I love cooking, but I hardly ever get a chance to do it. Since I'm somewhat of a semi-vegetarian (I eat fish and seafood) ready made food is horribly expensive and often taste revulting. There are basiclly tons of great vegetarian recipes which i'd love to explore, but sadly everything must be approved by my girlfriend first. if she likes it, she'll cook it for me.
Re: What are you eating/cooking?
Right now I have some chicken breast in the oven. I did the whole Campbells cream of mushroom thing so nothing fancy. I threw some carrots, potatoes and celery in there with it and I am making rice to put it on. Also making a side of zucchini and squash with some bell pepper and onion.

Eat this to become a ninja turtle:
Crust: Boboli (or make one if you can, but I got fired from Papa John's)
Sauce: Fresh salsa (pico ge gallo)
Cheese: Mozarella Veggie Shreds
Toppings: McCormick Salad Supreme and Garlic Powder, Parmesan Veggie Topping
Also, name a better salad topping than sesame sticks.

Made a pastrami rueben that was on hit the other day. Bought some Columbus pastrami from Costco and noticed I had some sauerkraut in the fridge. Couldn't do it cold, so I shredded up the pastrami, threw it in a pan with some olive oil and a tiny splash of vinegar, added some paprika, black pepper, and salt, cooked it until red, threw the pastrami on a slice of whole wheat and grated some gouda (only cheese I had) on top, piled on some kraut, broiled in the toaster oven for 5 minutes, took it out and added a little mustard, devoured in 3 minutes.
Made some hot link mac 'n cheese that was pretty bomb too. I just cut up couple hot links and sauteed 'em in a pan while 1lb of macaroni product (I think I used wagon wheels) boiled to al dente consistency, made a roux of butter, milk, and flour, then added 3 grated cheeses (parmesan, medium cheddar, and havarti) to the roux and cooked until a smooth consistency was achieved, drained and rinsed the pasta, poured the roux/cheese sauce into the pot with macaroni, dumped the hot links and hot link grease into the pot with everything else, stirred it all up and poured it into a casserole pan, grated some stale french bread into a pan with some butter, parmesan cheese and garlic salt, sauteed the bread crumbs and parmesan in the butter until lightly brown, then topped the casserole with the crumbs and baked for 20 minutes or so at about 400 degrees or so. I pulled the whole thing outta my ass (figuratively speaking of course) and it was delicious. Got a lot of compliments on it. Amazing what can happen when you get into an improv mode.
Can't forget the Top Ramen I had last night, with a little sesame oil of course. Good thing I didn't do an egg drop in it (reference to previously mentioned recall).

I ate scrambled eggs for breakfast. So far it seems to be linked to eggs from a couple of giant egg producers so I'm not worried.Ed Oscuro wrote:Hopefully not eggs if you're in the US! 380 million recalled and counting...

Re: What are you eating/cooking?
I got into baking bread about a year ago, and have really gotten hooked on it. White sandwich loaves, rolls, bagels, french bread, etc. It's gotten to the point that we don't buy bread at the store any more, just bake, slice, and freeze for later. I never knew how well fresh bread kept frozen. The latest thing we are getting fat on is cinnamon raisin pecan bread, DANG that stuff is delicious.

Re: What are you eating/cooking?
Nice. bread is one of those things I can sort of do in a pinch, but have never really been all that good with. I happen to like the Lahey no-knead bread recipe (look it up, there's plenty on the Internet about it) which can turn out some really good bread if you've got the patience to wait for the long rise times, but does require having some sort of heavy pan (as in something like enameled cast iron) to bake it in.Puddleglum wrote:I got into baking bread about a year ago, and have really gotten hooked on it. I occasionally joke that one of my motivations for trying to get married someday is so I can get a Kitchenaid mixer as a wedding present...
Re: What are you eating/cooking?
Raw carrots, broccoli, strawberries and celery with peanut butter.

Re: What are you eating/cooking?
That bread looks awesome. I just put a pork shoulder in the oven to slow cook at 225. I rubbed it down with salt, pepper, paprika, onion and garlic powder, cayenne, brown sugar and cumin and let it sit in the fridge overnight and now it'll probably sit in the oven for 4 or 5 hours.
I'm eating a salad right now in an attempt to balance out all the pulled pork I'm going to eat later.
