Hellfire
Haven't seen this mentioned much. Its a hard nut to crack, but an elegant multidirectional weapon system always made it cool. Loved the arcade and Megadrive games.

I'm not sure if there's a Toaplan thread, but there's definitely a Megadrive Shmups thread where a few people probably mentioned this game.
I bought the Genesis cart a few months ago and haven't really dove into it wholeheartedly yet. Just from trying it out, it was obvious that the gameplay is excellent, the visuals/soundtrack are solid, and the challenge is stiff.
I've been focusing on getting better at the vertical Toaplan games I have for the Genesis (Fire Shark, Truxton) and other hori-shooters like Whip Rush.
Despite not knowing much, I would cite a game like Hellfire as being a solid example of the no-bullshit game design that I sorely miss in the modern gaming world.
