I've noticed that the screen looks wider on DDP DOJ compared to DDP DOJ on the 360. Now this is in Yoko mode.
ESPGaluda looks about the same width, and I've noticed that DOJ and ESP look wider than any port on the 360. Did they just sorta cut off a bit of the top and bottom, or did they *gasp* stretch it???

You can play it either slightly squished (basically deformed + dowscaled), or pixel-perfect (or so it seems), but in case of the latter your average 4:3 CRT will probably cut off a border (but you can adjust the picture position to your liking).
In other words, all the pixels are there alright, unscathed, but your TV might not fit perfectly. Widescreen CRT would be a perfect solution, provided you can tate it.
