I recently upgraded to a gaming CRT with component in, so I went and looked at best AV output for a variety of systems. Does this look right?
PS2 - Component
Xbox - Component
GC - Component
DC - S-Video (technically VGA)
N64 - S-Video
Saturn - S-Video
Genesis - Composite
SNES - S-Video
PC Engine - Composite
Use VGA cable to VGA/Component adapter:
Dreamcast
Use Scart to Component adapter:
SNES
Systems you need to mod for RGB, then use Scart to Component adapter:
N64, Genesis, PC Engine

the Saturn, Genesis, and DC also can be used with a SCART(RGB) to component converter (transcoder).

For a GC to have component output, you have to have both an early-model GC with the appropriate output connector (it was removed in later revisions), and the proprietary cable that AFAIK was only available directly from Nintendo. If you don't have both of these things, you might as well get a Wii instead.

Genesis is already RGB.

Non-component GameCubes are probably the minority of consoles made, since it was a change made late in their lifespan.
