The question is, what PCB? I was thinking Dodonpachi, but then I realized how n00bish the apartment denizens are, so I was thinking against it.

If you go with it290's NeoGeo idea, you won't be putting DoDonPachi in there, you'll be stuck with NeoGeo games unless you want to go and swap the board every day.
Also, keep in mind that most (if not all) NeoGeo games work on a horizontal monitor setting, if you want to swap boards for a vertical shooter, you'll also have to partially dismantle the cabinet to rotate the monitor, so pick your poison wisely.

edit - Also, another suggestion if you want a wider variety of games would be to put in one of those Ultracade cabs or the like. If you don't mind emulation, that is. I played a cab recently that had Garegga + Strikers 1945 on it, and it was a pretty authentic experience. Didn't save high scores for some reason, though.
