Refresh my memory, guys. What do I need to make a 360 controller like the Hori ES-SE work under Windows XP ? Do I need a dedicated driver ? I remember something with a problematic driver installation and the need to rewrite the inf file to make it work...

As long as your all serviced-packed up, the drivers off Microsoft's site should work without a hitch under XP.
I use XP in a VM on my Linux box for testing hacked wired 360 controllers in sticks, and I've never had to go hacking inf files to get the drivers working.

Yup, the drivers from Microsoft are all you need.

Interestingly, I do have a few small problems with my HRAP EX-SE. If I put my laptop into hibernate, and then unplug the controller, when I boot the computer back up, windows doesn't recognize the controller (requires a restart), so I have to remember to never unplug the controller during hibernation. Also, the controller isn't recognized by wolfmame .99, though it recognizes all of my other controllers. All the other versions of MAME that I've tried have no trouble, so I don't know what the deal is. I just use Xpadder when using wolfmame .99.

I've use the MS official drivers, however, sometimes it doesn't work all well. So i've finding myself using a 3rd party drivers:

My Street Fighter IV Joystick works on both XP and Vista for me.
I plug it in and it automatically updates for me and works for everything I've used it so far with.
I'm assuming all other Xbox 360 controllers would work the same as well.
