Alright, I'm going to an auction this weekend and will hopefully come back with something. But, I was was wondering exactly how arcade monitors work?
In other words, I would ideally like to be able to convert and/or swap games. What do I need to know regarding what games work on what monitors?

Shmups wise, for anything other than Naomi/Type X you need a 15khz standard resolution monitor (CGA).
To play Naomi/TX you ideally need 31khz high res (VGA) monitor or multi/tri-sync monitor that does both.

Are 15 kHz and 31 kHz the only resolutions of arcade monitor, or are there others?

there is medium resolution at 25kHz.
concerning swapping games, read up on the JAMMA standard.

You'll find most 15khz monitors support 24khz medium res (EGA) as well, but you won't need that unless you want to play Sega "model" hardware, which is a bitch to set up.
