Looks like the Nunchuck+Wiimote is the preferable control method but don't take my word for it since I haven't played the game yet. Try it yourself.

Looks like you're right. I'll give it a try tonight, but I think I will still grab another wheel for casual multiplayer sessions.

I've spent some more time with this game now, and can say with certainty that the Wii Wheel is a perfectly feasible controller throughout the game. I've cleared 50cc and 100cc with all but one trophy being gold, I'm playing through 150cc now, and I've played (and won) a few more online matches, all using the wheel. It's surprisingly precise for steering, but the trick is that you need to learn self-restraint. With nothing to anchor the centre of the wheel you need to learn to avoid over-steering or tilting the wheel with one arm instead of rotating with both. Frankly, the only reason not to use it is if people find it embarrassing, in which case they should question why they bought a console that's based on flailing the arms around.
