Thanks to also the information provided in this forum I was able to figure out how to run Rayforce / Gunlock from the Windows version (only) "Taito Legends 2" CD also on Apple OSX (Intel iMac and MacBook). Maybe this is interesting for someone else, here are the required steps:

If this can be achieved in an easier way it would be great to hear about.
This is a great forum, thank you.

Let me clarify. The idea behind the whole exercise is this:
I wanted to play Rayforce on OSX. It is included on "Taito Legends 2" but this CD is NOT available for OSX. In this forum I found the hint that the ROMs on "Taito Legends 2" are in MAME compatible format. And you are right, MAME is available for OSX. The steps that I am describing show how to extract the ROM from the Windows CD and how to rename some of the files so that MAME OSX 0.122 is playing them.
So I guess the point is:
While you can legally buy the Rayforce ROM on “Taito Legends 2” you have to do something to also run it on OSX MAME (example: in case of you do not have a Windows machine available). Those required steps are explained here:

Hope this helps.

Darwine:
http://darwine.sourceforge.net/
CrossOver Games:
http://www.codeweavers.com/products/cxgames/
Two products that will allow running a wide variety of Win32 software on OSX. Darwine is free of charge, and CrossOver is pay-for. Both are perfectly viable solutions if despise the idea of running Windows just for games.
I personally use WINE quite regularly to play Doujin PC shooters on Linux with varying levels of success.
Cider:

is another option, but as I understand it this is more of a prepackaged thing where a developer can bundle code with Cider libraries to make games multi-platform out of the box, and is not something you can buy at a consumer level to play games across the board. Still, one to keep an eye on as a Mac gamer.

Elvis, Thank you for these links.
I tried Darwine, it looks promising, but I could not get any win shmups running. Can you point me to any example?
Regarding you comment on Cider. This discussion seems to provide some additional information about what a user could potentially do with Cider:
