mame and PC
I was wondering if anyone could recommend a few shmups for MAME and a few made for the PC, both free and commercial. I need something to hold me over while I start getting back into the genre. Also is there a version of MAME thats better for SHMUPing then other versions?

For Mame there's too many to list. You should take a look at the xenocidefiles. That page has large list of shooters and comments that might help you decide for yourself.
Here's some games I would recommend to all first timers.
Veritcal shooters:
Kyukyoku Tiger
Tatsujin
Strikers 1945
DoDonPachi
Battle Garegga
Horizontal:
R-Type
Progear
Area 88
X-Multiply
Pulstar
If you going after shooters on the PC. Go get Kamui by Siter Skain, it's the best doujin shooter I've ever played. You can still download a demo of the game from the link below. Mind you the cd-rom version is hard to find since they're out of print now.

Does it like old-school games (i.e. swarming planes) or bullet chaos (i.e. newer stuff)? That is a big part of the answer, naturally.

ZUN had made the some very high quality shmups, IMO they are actually better than many commercial shmups.

The Gamebox Jamma PCB is easiest way to get Mame on cab...
For alysa,
If you should ever want to get a full-sized arcade cabinet (Japanese or USA) or the smaller and more compact Supergun route, then it's possible to play with MAME on such a setup...
Of couse, one could buy such a generic 3rd-party produced "Gamebox" Jamma PCB -- essentially a stock 900MHz CPU motherboard mated to a full-sized 56-pin Jamma edge connection interface output using Win98SE OS -- already has DOSMame with Roms pre-loaded + several utility programs like Zsnes key for interfacing with said arcade cabinet or Supergun's arcade joystick & push button controls, ArcadeOS front end for use with DOS Mame setup, and a few others. It has it's own PC ATX power supply to power the Gamebox PCB rig seperately from the arcade cabinet or Supergun's PSU (Power Supply Unit). It's not a bad setup and one can even upload more arcade Roms to the built in 17.3GB HDD on the 2nd lower PC layer of this particular Gamebox PCB setup by simply detaching the HDD and hooking it up to an external secondary PC tower and do the dirty Roms uploading from there... ^_~
There is native support for use with 15.7kHz horizontal sync rate with the Gamebox PCB via the built-in VGA to RGB transcoder on-board for use with true low-resolution arcade RGB analog monitors... ^_~
There's support to hook up a old-style PS/2 interface PC keyboard + mouse setup for access to DOSMame's user controls for ease of use (once one knows exactly what he or she is doing with this Gamebox PCB)... ^_~
And it's possible to entirely upgrade to Mame32 emulation for more versatility of end-user options should one want to go that route... ^_~
So yes, it's possible to have the best of both worlds of arcade Jamma PCBs + a PC with Mame emulation (like the compact Gamebox Jamma PCB setup -- in reality, is a two-layer PCB setup but compact nevertheless and ideal for small mini-cute Japanese cabinets or arcade tabletop setups if arcade PCB space-wise issues are at a premium) with Y-Harness Jamma interface and select between one or the other on an arcade cabinet or Supergun setup (by simply pressing both 1P & 2P buttons at the same time to select either setup)..... ^_~
