figure out which of these are worth buying before they go away
Easy answer: none of them!
As gamer707 intimates, there are better ways to experience these - with more features and free to boot. Unless someone is dying to grab Sengoku Cannon before it's delisted
Am I correct that the only way to play these games on Monkey or Child difficulties was with these delisted ports? If so, we actually lost a bunch of really good stuff for beginners.
No, I am 99% positive that these difficulty settings can be found in the dip switches of all these games if pressing F2 and going to the appropriate service menu while using mame.

Just checking Gunbird 2 and Dragon Blaze on MAME, quickly, the only lower difficulty appears to be Easy, though I think most of their console ports had them (Can confirm Dreamcast port of Gunbird 2, as that game's "child" difficulty was one of my first 1cc, and the other DC ports did as well--ZG2 and Cannon Spike). If you're emulating anyway, there's no reason to stop at MAME, though I seem to remember the Dreamcast port of Gunbird 2 not playing well when I've tried emulating it in the past.
This Korean publisher apparently already published these titles on mobile platforms.
Is anyone familiar with the quality of their work?
I'm curious if these PC releases will be simple re-releases of the previous versions, or feature different ports/emulation.
My guess now is that these are exactly the same thing as the previous PC versions, 100% completely identical in every single way except for having the new publisher's logo and credits somewhere in there in place of whoever it was before.

.........
Exactly the same... but with AI?????
Think better bus come and run me over @_@"... hate this new world!!!
About the use of AI, the Steam store pages state the following:
«Some parts of the game trailer include AI-generated content. »
So, AI was used to partially create the trailers posted on the store pages, not actually in-game.
The screenshots basically look the same as the older versions previously available on Steam, so it's likely a straight re-release.
