I'd say many were good at the time, but from nowaday's point of view my favorite one is easily SEGA's Star Wars Trilogy Arcade from 1998. Unfortunately I never got the clear, I always die near the very end and have to continue or start over.

Star Wars Rogue Squadron II: Rogue Leader (GC)
Star Wars Rogue Squadron III: Rebel Strike (GC)
Star Wars: Dark Forces (PC, etc.) (was ok last time I played it, didn't finish it)
Star Wars Battle Pod (2014, Bandai Namco, Arcade) - this one is a weird case because I like the game, but what I hate about it is that I'm always Game Over after any mission I choose, even if I survive and all objectives were achieved. Can this be changed at all in the settings? I've played it at a few different locations and it was always as I said.
Unfortunately this is not the only newer arcade game where I'm always Game Over after only one level. I've also played many racing games where I was always Game Over after one race or one track, although I finished 1st. This breaks any game and goes entirely against what makes arcade games so appealing to me, because this way it doesn't even matter if you win or lose, survive or die, finish first or last, because it's just a short "ride" anyway, literally just a ride like in a theme park.
