But is Touhou an STG?
We say is not a "True" STG not because it doesn't have the mechanics, it clearly is an STG.
But we say is not a "true" one, because the scoring mechanics are non-existent, in STG games, we totally differentiate them by how you score them, because is the main mechanic afterall, is not the same to score Soukyugurentai than Garegga for example.
Touhou is like, just shoot and dodge whatever is on screen, and yes the scoring is there, but is so damn boring and just so plain basic that we don't even care, not even the Touhou community cares for score, and that's just lame, at this point, we don't care if the game has flashy patterns.
If the game doesn't have an interesting scoring mechanic, get out as an STG, we don't shoot, we score.

1. The games aren't anything special. (Exceptions exist. I've heard great things about UFO for example.)
2. The community largely isn't in it for the games. Ironically compared to your post, people are actually getting into touhou for the anime girls and setting.
3. These people then post Touhou and/or defend it to a high degree.
So basically the Touhou people tend to be out of touch from shmups and the shmups tend to be meh.

My knowledge of Touhou is absolutely minimal (I know it was one guy making some bullet hell shmups, and that a lot of related media and spin-off or fan games exist, and that's about it), so I don't know shit about storylines and the "universe".
I did try a couple of games, and found them perfectly forgettable. First of all, I'm more of a "classic", non-bullet hell shmup kind of guy, so they were not my thing. But, even so, the ones I tried looked perfectly amateurish and uninspired, so their popularity are completely alien to me.
But, to be fair, I did try two games, both not shmups, that apparently are tied to this "universe" (I believe they count as "fan games"), and I did enjoy them (despite them featuring some sort of "plot" that make no sense to me, that featured the worse anime cliches possible, with fighting maidens, magic spells, and the sort).
One of them was Touhou Luna Nights, a metroidvania by Team Ladybug, an indie team that does solid work.
Here's the Steam page (it's available in various other platforms as well):

The other was the most shameless rip-off of one of Iga's Castlevania titles for the Nintendo DS, and it was called Koumajou Densetsu: Scarlet Symphony. Everything on it, from the visuals, and even the soundtrack, seemed to be lifted right out, or copied, from those 3 Castlevania Nintendo DS games. But, since Castlevania is mostly done, and that game I'm referring to is getting a remaster next month (under the name Koumajou Remilia: Scarlet Symphony), it's probably worth checking out for those who are looking for a new Castlevania game of sorts to play.

I will NEVER be into Touhou. The creepy fan-service anime garbage is just so offputting and disturbing to me, I'm just done right from the start with that crap.
Besides, your argument doesn't work when you're among people who actually do play. You wouldn't want to be like those filthy secondaries and poorly characterize games you don't play, would you? I would never call myself a good player, but I at least know enough to understand the strengths and faults of these games instead of generically tarring them for vague reasons. I think there was an old discussion here about how Touhou games typically don't force you to interact with their mechanics so a lot of people never apply themselves and never understand what the game's trying to do.
Today I learned the "Fuck Touhou" forced-counter-meme is completely unironic. By the way, the origins of my previous shitpost were in reply to someone saying "Touhou is harder" - legitimately one of the greatest memes of all time and your own attempt puts paid to it. It was once more justified. You used to be able to find Touhou creeping its ass into every corner of the internet. I'm no analyst but it's a reasonable assumption that this is where most of the hate came from. These days Touhou still gets called bad because it has the same traits as it always had, but it's far less annoying. Assuming this is a personal attack (which is why i replied to begin with) - I've played and beat several of the games already and concluded that they aren't my thing, or that great for that matter. So no, this isn't just calling the games bad for its own sake, and I think many others will agree. If you were to ask me to recommend a PC shmup I'd spit out Crimzon Clover or Zeroranger immediately. Touhou games would be at least 10 titles further down the list if not more, and that's for the good ones.

Okay so this is something that I've seen a lot over the years and I keep being so annoyed by it, the perception that Touhou is just all creepy anime fanservice shit when that has never been a thing in the canon works. Like, I definitely see where it's coming from, since the cast full of girls has given rise to a whole lot of fan works that absolutely land in the fanservice and beyond realm, but the games and books have not once played up that aspect (and with ZUN's artistic skills nobody would want to see that done either amirite guys). There's many reasons you can have to not like Touhou, and that's fine, but at least pick one that's not blatantly false.

You know something... I dont even hate Touhou *games*. They're great STG's and I recommend them to people.
I just dont play them because its one of the only series of games where the art style completely puts me off. Something I usually dont like doing.

You're not winning when you play games perfectly or when you play something other people approve or disapprove off. You win in the most profound sense when you play for your own pure enjoyment. Just like we did when we were kids. Be true to yourselves. If you like Touhou then get that shit. If not play R-Type. Who cares?
