There's also Mamorukun, which for some reason the price has gone absolutely bat shit crazy for the disc.
Then there's 1942: Joint Strike if you want something to just mess around with. This game is very mediocre, so normally I wouldn't recommend it. Since it's slim pickings on PS3 though, I'd say you might get a few hours of casual fun out of this game. Go in with low enough expectations and you might be pleasantly surprised.
I would second Super Stardust HD. Fun game. Also don't sleep on the PSP version. Plays very well with the face buttons functioning as a 2nd D pad to approximate twin stick controls. Graphics are simple but crisp and run at flawless 60 fps.

Man, literally everyone has something bad to say about Joint Strike. I don't trust that at all. Usually when people say a game is "mediocre", it's actually pretty good and they're just picking favorites. People also used to say that 1941 was "mediocre", and they still say 1944 is, even though both of those games are great. Wish I had a way to play Joint Strike right now.

Joint Strike was developed by Backbone in the US, and likely had no involvement from the original teams. It's not horrible, but it's also hardly worthy of the pedigree.

I agree with you Despatche that 1944 is very underrated. It's always seemed to be a bit of the black sheep out of Raizing's output for some reason.
I could even see the argument that Joint Strike is slightly underrated, but no way is it anywhere near 1944 in quality. It is a very average title IMO. Not terrible shovelware, playable and entertaining, but just ok. Commando 3, also done by Backbone around the same era was in the same boat.
You could compare it to 1944 and it will lose in every category from graphics to OST to gameplay. Just look at the level design in terms of enemy variety and patterns. The 194X series has always relied on those old school spiraling patterns of fighter plane zako. 1944 will hit you with a couple waves of zako then mix it up by introducing another enemy type. Joint Strike will hit you with a wave of zako that completely fills the 16:9 aspect screen, then another, then another. It does feel repetitive and bland very quickly.
The first boss of Joint Strike has this long escape sequence that essentially becomes dead air as soon as you've seen it once. Not something you ever want on a stage 1 of a shmup if you want people to play your game for score.
One potential positive JS has going is its easy difficulty. Bc most shmups are so punishing the same few titles usually get recommended for beginners or players just looking for something more laid back in the genre. Whereas many players will faceplant on the difficulty of 1944, especially without an autofire button, 1942 JS can be picked up and played by anyone, which is a good thing IMO.

It's not traditional, but I cannot recommend Shatter enough. It's also available on Steam for those with more refined tastes.

The thing about the PS3 shooters is that most of the worthwhile stuff is generally also available with equal or better quality ports elsewhere. But the big name disc releases would be:
Ketsui (identical to the 360 version, and eclipsed by the PS4 M2 ShotTriggers version)
Under Defeat HD (also on 360)
Mamorokun (also on 360 and holy crap Rastan78 is right about price and kinda crazy)
Caladrius Blaze (also on PS4, Steam, Switch)
Raiden IV Overkill (also on Steam, and the recent Mikado Remix on Switch)
On PSN, there are also several interesting indie-ish STG and STG-adjacent games though. Checked my PS3 STG folder today and I see:
Astro Tripper (this one is quite fun)
Alien Breed (4 games in Team 17's twin-stick shooter series)
Luftrausers (by Vlambeer - sort of like a coked-up Combat from Atari 2600)
Super Stardust HD (Housemarque, twin stick shooter)
Dead Nation (Housemarque, another twin stick shooter)
Resogun (Housemarque, heavily Defender-inspired shooter)
Soldner-X and Soldner X-2
Gundemonium, GundeadliGne, and Higota Happa (trilogy from Japanese indie dev PlatineDispositif)*
Acceleration of Surugi X (a 1-on-1 competitive shooter sort of like the Senko no Ronde series)*
*these last 2 may be delisted, were published by Rockin Android
There are some good PS1 classics available too, though many are Japan-only releases (which you can buy on any region system with a Japanese PSN account). Check the lists here, but some highlights include
