Good quality BNC panel mount jacks and Switch?

No one has responded, I'll give it a shot. You could repurpose an affordable Extron ADA 3 80. I don't know about buying panel mounts with jacks in them already, but plenty of options with 75 ohm BNC jacks if you have the power tools to drill through a mount.
Plenty of manual mechanical switches and analog semiconductor switches (multiplexers) out there for cheap, especially given video's low power. Here is a datasheet that is pretty easy to understand. A 4PDT switch would mean there are two possible circuits (double throw) each having 4 poles/pins (for RGBS) that you can switch between.
I don't think opto couplers are as recommend for this purpose but, depending on the type, can switch upon detecting an AC input and can take a reference voltage on a pin so they don't switch from electrical noise.
