Should I expect an Extron to upscale a VCR signal better than a Faroudja 5000?
The "neutral" setting on the Extron is very sharp, so you might have to dial this back a bit. Faroudjas upscaling is very kind to VCR, laserdisc and SD in general.
Could the HDCP compliance on the 301 get in the way?
no. It just means that if your source has HDCP, then the Extron's output will have HDCP as well.

Absolutely not, the PS3 is the most finicky of the HDMI consoles when it comes to pairing together with an upscaler/processor (and unlike the PS4 you can not turn HDCP off) and yet it works no problem with the 301, I think that the PS TV is also pretty fussy as well and yet works no problem on the 301.
What do you think of deinterlacing/scaling on the Faroudja and using a TV with VGA input for ADC instead of an Extron? Maybe there are performance benefits when the TV and ADC are designed together?
Just a reminder that you can get an OSSC on Aliexpress for $80 (not much more than those Extron VGA to HDMIs). Although the Extrons also seem to have “or best offer” as an option so they could be worth a shot.
That way you would have an OSSC both for the simple conversion with this VHS Faroudja setup, and for use with video games as well. But the Aliexpress OSSCs take a while to ship
Yeah, I wasn’t suggesting it for that... just for the analog to digital/separate use with games. I would definitely check the forums I mentioned in a previous post
