Hi guys.
I am having issues with very low sound on my board. Very sure it was not like that last time I plugged it in, but it has been in storage for a couple of years. It looks like a previous owner removed the volume pot, disconnected the amp and bridged it on the underside, but as I mentioned, it was working fine previously.
I've replaced the two larger caps, but figured I'd ask for tips before proceeding any further.

Your photos are gargantuan!
Just link to them instead of embedding them.
In your position I'd just replace all remaining caps (there's only a couple), desolder the bridge and insert a volume pot, bringing the board closer to its original state again, with new parts, which shouldn't hurt.
Then see what the results are and go from there if there's still peculiarities.

I'd also have to reconnect all the pins of the amp, which is doable of course, but a hassle if not necessary.
I'm not sure how many of the caps are even in use with the amp bypassed.
Unless someone has a notion, I'll just replace 'em all.
