I just got Gameboy Interface working (score!) It looks great in LL and ULL, (240p) but the colors look ever-so-slightly off. Hardly noticable, but there. However, in the standard non-LL/ULL software, (480i), the colors look horribly dis-saturated and wrong! I use a fully grounded, fully shielded S-video cable for my Gamecube with no issues in any other situation except this.
I've heard that the GBI/LL/ULL/ looks more natural in a Component YPbPr color space because it was intended to be that way. Is that true? Whether or not this is true, what can I do to correct this?

The standard version has a color matrix selection, there's nothing wrong with your cables. I think the low-latency versions use the equivalent of the identity option.
I don't think the low lag versions support that option though, but I guess you could modify the color lookup table manually?--matrix=<identity|gba|gbi|nds|palm|psp|vba>
Set color matrix. (default: gba)
--lut3d=device:/path/to/file
Set 32x32x32 lookup table. (default: lutrgb.png)
