The parts you use won't make much difference. It's about the same amount of work involved.
If you want a stock-like shaft height, go with Sanwa JLF-TP-8YT or Seimitsu LS-55-01, LS-56-01.
Personally, I like the 'low down' feeling with an LS-32 installed.
If you get the Sanwa JLF, also get a 5-pin harness to go with it, part# JLF-H (Seimitsu includes it with their sticks).
I would recommend getting the screw type buttons on your first try, in case you fuck up the button hole shaving. And if you can afford it, the higher durability RG and X switched buttons. That is Sanwa OBSN-30RG and Seimitsu PS-14-GXN.
