Toughest decision, I'd go with the ultimate genre reference, though.
Crimson Clover OR Daris Burst AC
I haven't played CC, but Darius is my favourite stg series.
Pink Sweets OR Ibara
I don't play it too often, but several aspects of Pink Sweets are references for me, even outside shmups.
Dodonpachi OR Dodonpachi Daioujou
Also tough decision, but on a less important level. I guess DDP is the more approachable one.
Mahou Daisakusen OR Great Mahou Daisakusen
MD has stellar production values and is a curiosity from a time that shifted from old school to modern, but GMD is one of the Great genre masterpieces.
Ketsuipachi or Saidaioujou
Presentation-wise they're both utterly generic, bordering on budget releases, but I like the intensity of SDOJ's gameplay.
