Still need to grab some PS2 titles to complete my collection. I am a bit confused with all these different versions out there, complete, ultimate etc.
If you were wanting buy the whole series, which one (or two) of these games should I purchase?

Despite there being six individual Psyvariar releases on NTSCJ PS2, you can get the entire series with just two.
For the first game, get Psyvariar Complete Edition. As its name suggests, it collects both installments (Medium Unit and Revision) on a single disc. Besides the basic release, there's also a couple SEs with a superplay DVD and a soundtrack respectively. The game content remains the same, though. See this page for all of the previously mentioned (Complete/Complete+DVD/Complete+OST/Medium Unit/Revision).
For the second game on PS2, there's only Psyvariar 2: Ultimate Final. Comes with its own neat superplay DVD... for that reason, I keep it around even having the technically more accurate Dreamcast port.

The DC port is a bit more accurate in terms of visuals and such, as most Naomi DC ports are, but the PS2 edition has some extra stuff (a mission mode comes most immediately to mind; IIRC the DC edition also lacks a "roll" button, which the PS2 version has), so there's no reason to feel shortchanged going with "Ultimate Final".
BIL pretty much covered the rest; just grab any version of "Complete Edition" and you're set. If you have a PAL PS2 you can snag the localized release, which apparently turned out fine, though otherwise you'll have to import the JP version.

Yeah - PS2 Psyvariar Complete in PAL has a 60Hz option but it isn't at boot up as it usually is - you have to go into the options and select it. It won't save the setting so you have to set it every time you boot the game up .

Getting Jap versions (using swap magic disc)
Bil also said to grab Psyvariar 2: Ultimate Final. So your saying grab the "complete edition" and that covers all the versions of Psyvariar before the release of Psyvariar 2? That threw me off when you set just grab the "complete edition" and I'm set..

You need Complete Edition for the first two games, and Psyvariar 2 for the last. All the special editions and port subtitles make it seem convoluted, but there's really only three games: Medium Unit, Revision and 2.
(Well, Revision is technically more of a "Black Label" variant on the first game... no need to complicate this any further, though)
Just get Complete Edition and Ultimate Final, and you'll have all the Psyvariar the PS2 has to offer.
