Circle, Square, or Octagonal?
My guess would be most people prefer Octagonal.

There is no "best" option here. It's up to you to decide for yourself. If you have a joystick that can fit an octogate, just order one and make up your mind for yourself.

I've found that no matter what type of answer you're looking for, people on message boards just share their personal preference regardless. Well, some people (like me) like to ride the gate when they play. In these cases, an octogate can be really helpful. Other people with finer dexterity (I guess) move the stick to the point of engage, and no more. Then it can be annoying to have such restriction and a square gate is preferred. Personally, my preference is sticks where the travel of the shaft ends quickly after engage, such as the SUZO 500 or the IL Magstik, but they are very uncommon in today's fight sticks, where the SANWA JLF, Seimitsu LS-56 or the HORI Hayabusa are the talk of the town.

Get octagonal and square - give em both a go... you can pick up the gates individually for peanuts and swap them in/out of your stick.
Most popular is square - allows a jam to diagonal a bit more firmly. But equally there are those that like the octagonal for smoother/guided transitions (pretty popular for full/semi circle motion players - e.g. zangief players in sf).
A bit like stick types - I'd suggest playing with both even if you have a preference - at least occasionally. It can help break bad habits/tendancies and/or just shake it up a bit - give it a different feel... although equally if it's too much hassle or cost don't fret it - just get playing with what you like
