I've seen Garegga mentioned a few times - to be it's not a proper bullet hell... but a damn fine game nevertheless.

Anything Cave... I'm partial to Progear myself.

Zanac Neo and the Fantasy Zone series.
They aren't really bullet hells, but they're certainly shmups that aren't praised enough and I think very highly of.

You would be surprised by how fun some vertizontal danmakus might be.
Try Mars Matrix, Giga Wing or Chaos Field.

OT: Towards the beginning of this thread there's a post by Vyxx and it says he's a banned user. Is that for real? If so, what happened?

I've tried giga wing. It's fun, but I've beat it, but never really found a desire to play it again

Yeah, that's a shame as Vyxx will be missed, though I understand the decision to ban.
