I'm finally entering the last generation and picked up a PS3 slim on Craig's List.
I don't have a 360 but plan to pick up a J360 at some point.
Looking for recommendations for PSN/Retail games (Japanese or US) are as good or better on PS3 or exclusive.

Two great games that come to mind are Demon's Souls (exclusive) and Hard Corps: Uprising (mostly identical to the 360 version, but I believe the PS3 version has significantly faster loading times).

The PS3 version of Zone of the Enders HD was eventually patched by porting wizards HexaDrive, undoing the damage of High Voltage's lamentable hack job and producing the definitive version of ZOE2. This patch did not reach the 360 version.
Raiden IV Overkill and the upcoming Caladrius Blaze on PS3 have quite a bit of added content over their 360 versions.

Two exclusives you might want to check out are 3D Dot Game Heroes and Valkyria Chronicles. Both should be pretty cheap nowadays.

The Disgaea series is (mostly, there was a DS version of the original Disgaea) exclusive to Sony platforms, and those games are worth picking up if you're a tactics fan.
Other exclusives that are interesting:
-Journey
-3D Dot Game Heroes
-Everyday Shooter (although this eventually got a PC port)
-Critter Crunch (ditto)
But really, for the most part there is little difference between 360 and PS3 versions for the vast majority of multiplatform games.

Not sure how many of these are up your alley, but here are a few I own/am looking to own, just taking a quick trip down my list:
- The upcoming "Love Max" revision of Arcana Heart is a PS3 exclusive, at least in the West. If you're still interested in Street Fighter X Tekken the PS3 version has two characters (Pac-Man and Mega Man) that the 360 edition lacks.
- The "Atelier" series of JRPGs is almost entirely PS-exclusive (Annie on the DS is the only localized exception I'm aware of offhand). It's "mellower" than most of its kin, and more focused on time management and item creation than battles and exploration, but I find that running an item shop is a nice change of pace from saving the universe once in awhile. Some of them have Vita ports with a bit of extra content.
- I've only played a little bit of beat-em-up/RPG hybrid Dragon's Crown, but it's earned a fair deal of praise, even around here. Also has a Vita port.
- The PS3 version of Eternal Sonata has some extra stuff the 360 version doesn't; same goes for Star Ocean 4.
- Lots of "remastered" collections of PS2 stuff - Ratchet and Clank, Jak and Daxter, Sly Cooper, Final Fantasy X, Ico/SotC, etc. Ratchet and Sly also have PS3-native stuff out too, of course.
- "Mamoru-kun Curse" on the PSN is the only way to get that game without importing - I think the price is down to ten bucks now.
- Haven't played much Ni no Kuni either, but there's another high-profile JRPG for you.
- The "Project Diva" rhythm games are PS3/Vita exclusive, though the latest 3DS version is apparently also being localized.
- Puppeteer is also supposed to be a good platformer.
- I don't have much experience with the Tales series, but I enjoyed Graces F quite a bit. Xillia and the Symphonia pack are also exclusives, with Xillia 2 and Zestiria on the way.
Those are the most "notable" ones I know offhand.

The Last of Us - a post-apocalyptic zombie game with an actually amazing story and a great cast of characters. The PS3's best. Made me retroactively hate Resident Evil plotlines.

ICO is a bad game
Wipeout HD, Demon's Souls, Valkyria Chronicles, and Yakuza 4 are the best PS3 exclusives I've played.

Get Valkyria Chronicles and Wipeout HD first.
The Last of Us is best on PS4. So wait until you get a PS4, no reason to rush playing it. If you have a 360 controller with a good dpad, Mega Man 9 & 10 are preferable on 360, the PS3 versions have huge black overscan borders that can't be disabled.
I feel like The House of the Dead 4 deserves to be mentioned, but I haven't played it enough to actually recommend it (and you would need a Move controller).

I believe The Last Of Us was a truly great game for what it was. It's worth playing imo.
Demon's Souls for sure.
Besides the PS1 classics you named, there are a few good Turbo Grafx / PCE classics like Winds of Thunder, Soldier Blade, etc. worth checking out as well.

The Infamous games are pretty good. I haven't played the stand-alone game based on Infamous 2, but I've played the other ones for the PS3 and they're pretty good.

"Dragon's Crown" - Best beat-em up since the 16-bit era!
"LittleBigPlanet" - Great game.
"LittleBigPlanet 2" - I think the story suffers a bit compared to the first, but it's still worth it.
"Ninja Gaiden Sigma 1 & 2" Not really exclusive and not always as good, but some of the changes/extras are worth it even if you have it on the Xbox.
"God of War" (Series) - A solid series, and mostly worth all the hype it's gotten.
"Disgaea 3, 4 & D2" - A must have series if you like Strategy RPG's.
"3D Dot Game Heroes" - A homage to the Original Zelda game and other 8-bit RPG's. Even if I think it suffers a bit with some more modern gameplay themes that make it a bit of a chore at times.
"Motorstorm"(Series) - If you like racing, these are pretty cheap and fun enough.
"The Witch and the Hundred Knight" - Suffers from a game crashing bug that hasn't been fixed yet...but it's a fun game that doesn't censor itself too much when it comes to trash talking and other 'mature' themes. Nowhere near as serious as the God of War games, but not as vapid as games that try to make a big deal out of things and come across as even less mature.

Both Wipeout HD Fury & Ridge Racer 7 have 3D versions which look awesome running on a 3D LED/LCD HDTV setup. Same goes for the GT5 game with built-in 3D support as well. Wipeout HD Fury has an arcade-spec & silky-smooth 60fps framerate with full 1080p support. How cool is that?
Blaz Blue: Chrono Phantasma is a PS3 exclusive as it wasn't released on the XBox 360 whatsoever. BB:CP LE set comes with plenty of cool swag compared to the regular BB:PC released. Arc Systems said that they'd have to compress BB:CP quite a bit with some trade-offs in performance to get it all to fit on single 360 DVD-Rom disc.
PS3 Initial D is ace if you like arcade drifting racing titles.
